I thought I do a what I eat in a day post, I’ve been meaning to do one for a while but I’ve been really busy lately revising for my January exams. I think what I ate on this day was overall healthy, but I do have to say that I don’t eat like this all the time, some days I eat healthy and others I don’t, though I do try to eat well more often than not. I also do have to say that on that particular day I wan’t feeling to great, so my eating habits may have been a bit off.
I just cut up an apple and dipped it into some plain peanut butter, simple but delicious.
Mid morning I had a very yummy chocolate coconut flapjack. I want to try making something similar myself soon so I can eliminate the packaging.
I had some leftover lentil bolognese so I had that with some whole wheat spaghetti and topped it with nutritional yeast and hemp seeds (it is in a pot because I was just about to go out).
I felt a bit peckish so I toasted some sourdough bread and topped it with this really nice pate I got when on holiday in France (I think the main ingredients were olives, mint and lemon juice).
My sister is trying to eat healthy at the minute so I offered to cook her dinner. I chose to make butternut squash based pizza and topped it with tomatoes, pesto, mushrooms, onion, peppers and balsamic glaze. I served it with stir fried broccoli (I steamed the broccoli and then cooked it with garlic, soy sauce, miso paste, vinegar and a dash of maple syrup). Sorry for the poor quality photo, it was dark and I was hungry!
